Origin of Bingka Ubi

Bingka Ubi, also known as Tapioca Cake or Cassava Cake, is a much-loved traidional kuih that is enjoyed by many. It is a traditional food from South Banjarese, Kalimantan. It has a soft, sticky texture and is usually baked or steamed. It is mainly made with local ingredients that can be found in our country, which are tapioca, eggs, and coconut milk. It does not require any flour hence makes it one of the healthier dessert that is super delicious!

Description of Bingka Ubi

Kuih Bingka Ubi Kayu“, or better known as “Bingka Ubi” is another much-loved “kueh” of Malay-Peranakan origin. It is sometimes spelt as “Binka Ubi” or “Bengka Ubi” depending on how it is being pronounced in the variety of colloquial tongues in this region.This traditional cake/ kuih is semi-soft, chewy and fragrant. It is yellow in colour. It has an inviting aroma from the pandan leaves, eggs and coconut milk.Coconut and cassava/tapioca go really well together, with the natural earthy sweetness from the starchy root complimenting the richness of the santan (coconut milk). And of course coconut milk and salt is an age-old combination. i.e. when there is santan, there must be salt. And the salt is perfect to bear contrast and accentuate the sweetness of the dessert snack without making it too cloying. Unlike some other kuehs, the recipe for Bengka Ubi is rather straightforward. And given how easily grated cassava is now available in local wet markets, it is literally a breeze to make it nowadays.

Bingka Ubi’s Recipe

  • 4 cup grated tapioca (approximately 2 kg)
  • 1 cup white sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 cups coconut milk
  • 2 tablespoons of the oil (to be mixed with dough)
  • 2 tablespoons of the oil (for baking sheet)
  • few drops of yellow food coloring

How to make it?
  1. Blend cassava with water and strain the water. (the strained water can be used to blend the other cassava)
  2. Eliminate the strained water later and separate the starch
  3. Add the eggs, sugar, salt and a few drops of yellow food coloring.
  4. Stir and pour some coconut milk slowly until the batter is well mixed
  5. Brush the pan with some oil and preheat the oven to 200 degrees.
  6. Pour the batter into the pan of approximately 8 inches in size.
  7. Take a few tablespoons of butter and sprinkled over the dough.
  8. Bake for 1 hour to 1 1/2 hours, depending on the crust you prefer.
